Vegan Chipotle Chili
                          
                          Prep time: 20 minutes 
                          Cooking Time: 6-8 Hours                           
                          Yield:8-10 servings 
                          Ingredients: 
                          
                          - 1 onion, diced
 
                            - 3 cloves garlic, minced
 
                            - 1 green bell pepper, chopped
 
                           -  2 carrots, grated or sliced thin
 
                            - 1 1/2 cup corn
 
                           -  1 zucchini, diced
 
                           -  1 can kidney beans
 
                          - 1 can black beans
 
                          - 1 cup quinoa 
 
                            - 2 15 ounce cans diced tomatoes
 
                            - 1/2 cup water
 
                            - 2 tbsp chili powder
 
                          - 2 health dashes liquid smoke
 
                           -  1 tsp cumin
 
                            - 1 tsp red pepper flakes
 
                            - dash cayenne pepper
 
                            - dash tabasco sauce 
 
                           -  2-4 canned chipotle peppers with seeds scraped out
 
                          - 1 tbsp cocoa powder
 
                           
                          Method:  
                          Add all ingredients into slow cooker except cocoa and cook on low for 6-8 hours. 
                          Stir in cocoa in the last hour.  |
